Easy Vegetarian Meal Ideas – When You Have a Limited Kitchen
Today’s blog post is perfect for any one out there who wants to eat healthy and is dealing with a very limited kitchen. Whether you’re a college student, traveling, renting a home in a big city (with tiny apartments) or are living in a temporary situation, I feel you.
Right now, as many of you know I’m living in London. When I was trying to figure out where I wanted to stay for the three months, I weighed a couple options. I could hop around hostels for a while, try to find an apartment when I got there (something I’ve done before, but it is super stressful) stay in a shared home or get an airbnb to myself.
I opted for the latter. I’ve used airbnb a lot for my travels (ps this is not sponsored at all, but airbnb if you’re out there and reading this, holla at your girl). Honestly I’m amazed at how easy the whole thing is. I decided that I’d do six weeks in a very central studio apartment and then the second six weeks in a slightly larger, less central location.
I have zero complaints about the place I’m in now. The British museum is a stone’s throw away from my building. But the kitchen is TINY. I also don’t have tons of spices, ingredients and tools, nor do I plan on buying them for this trip.
So it’s helped me get really creative with simple meals. Full disclosure: I’ve had avocado toast almost every day. I have no shame in meal repeating.
I figured it would be useful to share some of my staple simple vegetarian meals that I eat on the regular. These are also great when you’re living in a city and don’t want to haul 10 shopping bags of groceries up your 4 story walk up *aka if you’re me.*

Simple Vegetarian Meals with 5 Ingredients or Less
Toast with scrambled eggs + cheese
Granola + Raspberries + Almond Butter + Almond Milk
Toast with avocado + kale + almond butter (it sounds weird but it’s so good)
Pasta + Kale + Pesto
(you can add an egg or some kind of protein if you’re looking for something more filling)
Toast with an egg + arugula + olive oil + salt
My Weekly Grocery List
- 4 Lemons (for my AM warm lemon water and collagen)
- 2 Avocados
- 3 Zucchinis (or courgettes as the Brits call them)
- 1 Bag of Kale
- 1 Jar of Almond Butter (every 2 weeks)
- Almond Milk
- Granola
- Raspberries
- Whole Wheat Pasta
- Eggs
- Nuts
- 1 Loaf of Sourdough Bread
1 time purchases
- Salt
- Olive oil
- Jar of Pesto
